This is a heart healthy appetizer that is both delicious and satisfying. It is easy to make and beautiful to the eye, not to mention what it does for your tummy. Yummy!! * Prep time: 40 minutes * | * Total time: 40 minutes * | * Servings: 4 * 8 ounce(s) of Philadelphia 1/3 less fat cream cheese * 1/4 cup(s) of lite sour cream * 2 tbsp. of springtime vegetable soup mix * 1/4 cup(s) of finely chopped roasted red pepper * 1/4 cup(s) of minced green onion * 1/2 cup(s) of finely chopped carrots * 1/2 cup(s) of finely chopped blk olives * 2 cup(s) of fresh baby spinach * 1/2 English cucumber sliced thinly on the long side * 1 cup(s) of finely shredded sharp cheddar cheese * 6 heart healthy tortilla shells * 1/8 pinch of pepper and seasoning salt to taste Steps 1. In a medium bowl mix the cream cheese and sour cream together. 2. Add the springtime vegetable soup mix. 3. Chop your vegetables such as your carrots, roasted red pepper, black olives,and green onion. 4. Add your vegetables to your cream cheese mixture and stir till just combined. 5. Place one tortilla on working surface and spread the cream cheese veggie mixture liberally to cover the entire tortilla shell. (now don’t be shy or these will be dry.) 6. Place baby spinach leaves on top of the cream cheese mixture till covered. 7. Slice your cucumber long ways very thinly, and place 1 slice cross ways in middle of tortilla shell on top of the spinach. 8. Sprinkle your shredded cheese on top of the entire tortilla 9.
